Domaine de Pierrascas

The winery is located in the town of La Garde, in the Var, on the A.O.P. The Domaine has been practicing organic farming since 1983 and was one of the first Var estates to obtain the AB label.

The winery is located in the town of La Garde, in the Var, on the A.O.P. The Domaine has been practicing organic farming since 1983 and was one of the first Var estates to obtain the AB label. The exploitation is exclusively agricultural and the production is composed of main and accessory grape varieties which fall within the specifications of the Côtes de Provence.

The assets of the domain
Organic farming (use of A.B. approved products)
Manual work will be preferred to mechanical work (Use of the pickaxe rather than an inter-stock).
Manual harvesting in boxes of 30 kilos preserves the quality of the bunches (no crushing, the juice remains contained in the grapes so no oxidation…).
The press is done in a membrane press.

Vinification work in the cellar
All the inputs in the cellar are approved for organic vinification, resulting in a product: "BIO WINE". The white and rosé wines undergo their alcoholic fermentation in stainless steel vats, while the red wines begin their fermentation in concrete vats and finish it in oak tuns. The white and rosé wines are sold and consumed in the year following the harvest, the red wines are marketed at least 12 months after the harvest, they are aged in oak.


Marketing of wine in bottles or small bulk
The private cellar of the Pierrascas estate awaits you on Tuesday and Saturday from 8 a.m. to 8 p.m. for sales and tastings. All the cultivation work, in the cellar, in the packaging or in the store, is carried out by a single person: the Pierrascas winegrower.
